I am going to skip the small talk here and get right to the point: these no bake vegan chocolate coconut date bars are AMAZING. And I highly suggest making them if you enjoy chocolatey delicious treats that take MINUTES to make. I mean, who doesn’t?
So, I actually JUST made these bars and I tried them, semi freaked out because they were so good, posted them to my Instagram stories, ate a few more bites and now I am sitting down writing this blog post. I don’t mess around.
I adapted this recipe from my no bake samoa cookie recipe that is on my Instagram. I was in the mood for a chocolate and coconut dessert but I knew I wanted it extra chocolatey. So, I made the samoa cookie recipe but added cacao powder to the mixture, added the mixture to a loaf pan to make thick bars and then topped it with melted dark chocolate. Seriously so amazing! They taste like extra chocolatey samoas and are incredibly addicting. Let’s get started.

These no bake vegan chocolate coconut date bars are made with only 6 simple ingredients! They are oil-free, gluten-free and have no added sweeteners.
Medjool Dates
Shredded Unsweetened Coconut
Cacao Powder
Vanilla Extract
Salt
Dark Chocolate Chips
How to Make Vegan Chocolate Coconut Date Bars
Start by adding all of the ingredients, minus the chocolate chips, to the food processor and pulse for a minute or so. The mixture should be soft, moist and slightly sticky. Make sure there are no large pieces of dates remaining. If it looks dry, keep pulsing. Note: your medjool dates should be plump, sticky and moist. If they feel dry and look wrinkled, soak them in hot water for about 10-15 minutes, drain the water, then proceed with the recipe.
Line a loaf pan with parchment paper and then add in the mixture. Use your fingers or a small spatula to press down firmly so that the mixture is in a tight & even layer. Make sure to press firmly so the mixture sticks together. Set aside.
Next, add your dark chocolate chips to a microwave safe bowl. Microwave for about 1 minute and 30 seconds, stopping every 30 seconds to stir very well.
Grab the loaf pan and pour the melted dark chocolate over the mixture then spread into an even layer with a small spatula. Then, add some extra shredded coconut on top (optional) and place the loaf pan in the freezer for about 10 or so minutes, until the chocolate has set. Once the dark chocoalte layer has hardened, slice into bars and enjoy!
Store these bars covered in the refrigerator. You can eat them straight from the fridge, or let them sit at room temp for a few minutes to soften before eating.

Possibly! I recommend medjool dates because they are stickier and they taste better, but deglet noor can work as well. I recommend first soaking them in hot water for about 10-15 minutes, drain the water, and then proceed with the recipe.
Of course! Just be aware that using semi-sweet or milk chocolate will make these bars more sweet than using dark chocolate. They are pretty sweet as is and I prefer a rich taste, but go with your personal preference!
Yes, you do. A blender won’t be able to handle pulsing the dates.
