Vegan Chickpea Salad Sandwich

I’ve been making chickpea salad sandwiches for years and they never bore me! This is such an easy and nutritious lunch idea. It takes about 20 minutes to prepare and you have lunch for several days (unless you eat the majority of it while making it which is what I do).

Start with canned cooked chickpeas. Drain and rinse them. You want these to be somewhat dry so the chickpea salad doesn’t turn out watery so simply put the chickpeas in a paper towel and squeeze and roll a bit to dry them off.

Transfer chickpeas to a large bowl. Cut your veggies and kale. Add vegan mayo, mustard, lemon juice and seasonings to the chickpeas. Mix it up so it’s well coated and then mash your chickpeas. This is what gives them that “shredded chicken” look and texture. I use a potato masher but a fork works as well.

After your chickpeas are mashed, add the chopped veggies and kale and stir again. Now taste test! Add more vegan mayo for a more “wet” chickpea salad, more lemon for an extra zesty taste, or more black pepper for a little kick. You can also add more veggies like shredded carrots, add cranberries or grapes for some sweetness and you can forgo the bread completely and eat it over salad greens. This recipe is extremely versatile and you can play with the seasonings. My recipe is really just a guideline!

Make sure to use a quality vegan mayo. I stay away from too much added oil, soy and “natural flavors.” Also, look for breads made of whole wheat (if not gluten-free) and no added processed sugars. Enjoy!


Chickpea Salad Sandwich

Vegan4 servings
2 cans chickpeas, drained rinsed and driedHandful of kale 4 celery ribs 5 green onion stalks 5-6 tbsp vegan mayo 2 tbsp Dijon or spicy mustard 1 tsp smoked paprika 1/4 tsp celery salt 1/4 tsp garlic powderSalt and pepper to taste Lemon juice to taste


Instructions:

  • Drain, rinse and dry chickpeas.
  • Chop veggies and kale.
  • Add chickpeas to a large bowl and add vegan mayo, mustard, lemon juice and seasonings. Stir and mash.
  • Add veggies and kale. Stir and serve!
