Vegan fluffy oat flour pancakes! These healthy pancakes are so easy to make, gluten-free, oil-free and delicious!
Pancakes just got so. much. healthier! *happy dance* Just me? Ok. Sorry. I love food.
I love the simplicity of these and how wonderful they taste. Oat flour, flax egg, nut milk and maple syrup are the highlights of these pancakes. They come together in one bowl and take about 10 minutes!
I always thought that eliminating processed flour and dairy/eggs would leave me with, while tasteful, flat pancakes. Although, I’m here to tell you that you can make perfectly tasteful and fluffy vegan and non-processed flour pancakes that taste sooo much like the real deal.
I wanted to leave the banana out of this recipe because while banana makes a great sub for egg ( I even have an awesome banana blender pancake recipe here!), people don’t alwayssss want their pancakes tasting like bananas!
The sugar content is low, only 1/4 cup + 1 tbsp for the whole batch. It keeps the recipe versatile enough for people who just want semi-sweet pancakes with no frills, or for those who love to slather syrup and toppings on theirs.

How to Make Vegan Fluffy Oat Flour Pancakes
It’s so simple!
First, get out your blender, add in 2 cups of rolled oats, and blend away until you are left with a soft flour. It’s really that easy.
Next, you’ll add one tablespoon of ground flax seed and 3 tablespoons of water in a bowl to make your flax egg. This helps everything hold together nicely.
Let that sit for about 5 minutes then add syrup, vanilla, apple cider vinegar, and milk. Stir.
Next add your oat flour. Stir or whisk well to ensure there aren’t any clumps. Then add salt, baking powder and baking soda. Stir again until well incorporated and smooth.
Let the batter rest for 5-10 minutes to thicken.
While the batter is resting, heat up your pan and add a little vegan butter or oil (avocado or coconut works). If totally oil-free, a trust non-stick pan should work.
When the pan is nice and hot, add about 2 tablespoons of batter per pancake. I like to add the first tablespoon, then add the second right on top of the first to make a thick pancake but also use your utensil to spread the batter out a little bit. These rise, but only spread a little so ensure your pancake batter on the pan is as big as you want the pancake.
Cook on each side for around 2 minutes or so on each side, depending on how hot your pan is and enjoy! This recipe makes about 10 medium pancakes.
Top with fruit, syrup, peanut butter, almond butter, chocolate chips, anything!
Vegan Fluffy Oat Flour Pancakes
Ingredients
- 2 cups rolled oats pulsed in a blender until a soft flour forms
- 1/4 cup + 1 tbsp maple syrup
- 1 tbsp ground flax seed
- 3 tbsp water
- 1 cup plant-based milk
- 1 & 1/2 tsp apple cider vinegar
- 1 & 1/2 tsp vanilla extract
- 2 & 1/2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 tsp salt
Instructions
- First, add your rolled oats to the blender and pulse until a soft fine flour forms.Add flax seed and water to a large bowl to make flax egg. Mix together and let this sit for about 5 minutes.
- Add vanilla, plant-based milk, apple cider vinegar and maple syrup to the bowl with the flax egg. Stir well.
- Next, add in the oat flour and stir. Make sure there are no clumps. You may want to use a whisk if the batter seems clumpy!Then add the baking powder, baking soda and salt. Stir or whisk until well incorporated and smooth.
- Let the batter rest for 5-10 minutes to thicken. While the batter is resting, heat up a little vegan butter or oil on a large pan on med heat if you don't have a trusty non-stick pan. Once heated, add about 2 tbsp of batter per pancake, spreading evenly to ensure an evenly wide and thick pancake.
- Cook over med heat for about a two minutes on each side, depending on how hot your pan is getting, until golden brown on both sides.
Notes
- Be sure to avoid over-mixing batter.
- These pancakes are NOT overly sweet. I kept the sugar amount low on purpose so adjust accordingly to preference.
- While the recipe is oil free, you will need oil or vegan butter to cook unless you have a trusty non-stick pan.
