These healthier copycat kudos bars are date sweetened, contain no added sugar, vegan, gluten-free, no bake and easy to make!
I love a good throwback treat! I used to devour Kudos Bars as a kid so of course I had to make a healthier recipe!
These healthier copycat kudos bars are so similar to the originals: a crispy cereal and oat base, dipped and drizzled with chocolate and topped with crunchy candy.
They are so delicious and require only a handful of simple ingredients and are perfect for kids lunchboxes! The best part: NO baking required!
They are also sweetened with Medjool dates with no other added sugar (aside from the chocolate chips and chocolate candy). The dates are the perfect sweetener because they also hold these bars together and give them the best chewy texture.
Ingredients and Substitutions
Medjool Dates
Sprouted Rolled Oats– regular rolled oats will work too
Sprouted Brown Rice Crisps– any brown rice cereal works
Canned Full Fat Coconut Cream– you could skip and just use water but I like the taste the coconut cream adds
Vanilla Extract
Salt
Crispy Chocolate Candy– I use Unreal Crispy Quinoa but you could use any chocolate candy you like
Dark Chocolate Chips– semi-sweet, milk or white would be good as well just keep in mind they bars will be a lot sweeter
How to Make Healthier Copycat Kudos Bars
First, grab your food processor and add your Medjool dates, canned coconut cream and vanilla extract. Blend until smooth and creamy.
Remove the food processor blade and stir in the rice crisps, oats and salt. Mix well.
Line an 8×8 baking dish with parchment paper and add the mixture. Use your hands to press down firmly so that the mixture is in an even layer. Freeze for about 10-15 minutes or until mixture is firm enough to stay together but soft enough to slice. Slice mixture into 8 bars. Set aside.
Next, melt your chocolate chips. Dip the bottom of each bar into the melted chocolate and place on a plate lined with parchment paper.
After each bar is dipped, top with crispy chocolate candy and drizzle the extra melted chocolate on top. Make sure to add the drizzle on top of the candy pieces so it sticks to the bars.
Freeze until chocolate has hardened, about 10 minutes. These healthier copycat kudos bars are best stored covered in the fridge. Enjoy!

- 1 cup Medjool dates packed, about 12-13 large dates
- 1 cup sprouted rice crisps or any regular rice crisps/cereal
- 3/4 cup sprouted rolled oats or regular rolled oats
- 3 tbsp canned full fat coconut cream or water
- 1 tsp vanilla extract
- 1/4 tsp Pink salt
- 1 cup dark chocolate chips
- A couple handfuls crispy chocolate candy
