I’m blown away by this recipe. Truly blown away.
I never intended to make monkey bread, and this recipe was born out of pure laziness. Hear me out.
This whole idea started because I was brainstorming Christmas breakfast ideas and I made cinnamon rolls with Greek yogurt and einkorn flour several months ago. They came out great, but I hate rolling dough (I told you, lazy!) So I set out to make the recipe again but this time, my plan was to make a cinnamon roll casserole so I didn’t have to roll any dough and it would take less time to make on Christmas morning! Brilliant, right?
Well. Sort of! I’ve never made monkey bread before, but after I tossed the dough balls in the melted butter and cinnamon and sugar, I quickly realized this was absolutely monkey bread lol. No complaints though. I baked it in the oven and my husband and I polished off almost the entire dish in one day.
You would honestly never know this is a healthier monkey bread, just look at how perfectly fluffy it is!
This healthier Greek yogurt monkey bread is not only incredibly delicious, but it’s SO easy to make. The dough is a simple 4 ingredients (nonfat Greek yogurt, einkorn flour, baking powder, and salt) that is rolled and divided and tossed in melted butter and a cinnamon sugar mixture.
You put it in a baking dish, pop it in the oven and it’s ready in 20 minutes. Top with icing and enjoy while it’s warm. So simple and so mouthwatering.

Healthier Greek Yogurt Monkey Bread
Ingredients
Dough Ingredients
- 1 & 1/4 cup Nonfat Greek yogurt
- 1 & 3/4 cup plus 1 or 2 tbsp all purpose einkorn flour
- 2 tsp baking powder
- 1 tsp pink Himalayan salt
Butter + Cinnamon Sugar Topping
- 1/3 cup coconut sugar
- 4 tsp ground cinnamon
- 3 tbsp salted butter make sure you measure the butter while it’s cold and THEN melt it
Icing
- 1/2 cup powdered sugar
- about 3 tsp almond milk or milk or choice start with 3 tsp and add a tiny bit more to thin, if needed
Instructions
- First, preheat your oven to 350°F. Grab either a square or round 9 inch glass baking dish and grease with butter then set aside.
- Grab a medium bowl and add all of your dry dough ingredients (einkorn flour, baking powder and salt). Mix well. Then add in the Greek yogurt and mix well with a spatula or your hands until a soft dough forms. (The consistency of the dough should be soft and a tiny bit sticky. You should be able to easily mix it with a spatula and knead it with your hands. You want to add more flour ONLY if it’s so sticky that it’s sticking to your fingers and you can’t roll it with your hands. Only add 1 or 2 extra tbsp of flour and not any more or it will affect the texture of the monkey bread).
- Next, grab a sheet of parchment paper and sprinkle a little einkorn flour evenly on the parchment paper. With your hands, form the dough into a big ball and place it on the parchment paper. Roll the dough in the flour until the surface of the dough ball is lightly coated in a little bit of flour. This is just so it’s easier to handle and slice.
- Slice the dough ball into four even pieces. Then slice those four pieces to make eight pieces. Then take those eight pieces and slice them into bite-size pieces. Please see the photos above for reference! Add the pieces of dough to a medium bowl and set aside.
- For these next steps, you are going to add your melted butter and your cinnamon and sugar mixture to the pieces of dough. The melted butter will be added first, and then the cinnamon + sugar mixture will be added. Measure out 3 tablespoons of cold salted butter. Melt the butter and wait for it to cool. Then, in a separate small bowl, add your coconut sugar and cinnamon and stir well. Pour the melted butter in the bowl with the dough and give it a little shake to coat evenly. Then add the cinnamon & sugar mixture. Very gently mix so that the pieces of dough are coated evenly with the melted butter and cinnamon & sugar. You can gently shake the bowl or stir very gently with a spatula. Just be careful not to break the dough.
- Add the mixture evenly to your greased baking dish. Try to put the dough in an even layer but it’s ok if some overlap.
- Bake for about 17-22 minutes on the middle rack. Mine is perfect at 20 minutes. The monkey bread is done when it’s fluffy and bouncy and a knife or toothpick inserted comes out clean. Don’t overbake!
- While the monkey bread is in the oven, make your icing. Mix your powdered sugar and almond milk (or milk of choice) in a small bowl and whisk well. Pour the icing over the monkey bread after it has cooled for about ten minutes and eat while it’s warm. Enjoy!
