Your favorite Italian Almond Christmas cookies but made with healthy wholesome ingredients, vegan and gluten-free and sweetened with pure maple syrup

I couldn’t wait to attempt this healthier recipe for Christmas! I grew up eating these delicious Italian cookies and they are still one of my favorites.
After couple batches, I am happy to report that using wholesome ingredients and making these vegan and gluten-free totally works and they taste JUST like the classics.
These Italian almond Christmas cookies are made with almond flour which keeps them gluten-free and so soft and moist. They are sweetened with pure maple syrup and the combination of vanilla extract and almond extract gives them the best flavor!

These cookies are also incredibly easy to make and are ready in less than 20 minutes! The icing on top is a simple powdered sugar + almond milk combination and I topped mine with naturally colored Christmas sugar sprinkles. Hope you love this recipe!

Italian Almond Christmas Cookies [V+GF]
Ingredients
Cookies
- 2 cups blanched almond flour
- 4 tbsp pure maple syrup
- 2 tbsp olive oil
- 1 tsp vanilla extract
- 1/4 + 1/8 tsp almond extract
- 1/2 tsp pink Himalayan salt
Icing
- 1/2 cup powdered sugar
- About 2 & 1/2 tsps almond milk add milk slowly while whisking until you have a thick but easily pourable icing.
Instructions
- Start by preheating the oven to 350 degrees F. Then, in a medium bowl, add all of your cookie ingredients and mix well with a spatula. The dough should be moist but a little crumbly. It should easily stick together.
- Line a cookie sheet with parchment paper. Roll the dough evenly into 8 balls, about 2 & 1/2 tbsp of dough per cookie.
- Once rolled into balls, only flatten slightly! These cookies do not spread and they do not change shape in the oven.
- Bake for about 10-12 minutes. Mine are perfect at 11 minutes. All ovens are different so watch these closely. They are done when the bottoms are golden brown. (If you are using a dark cookie sheet you may have to bake for less time).
- Let the cookies cool completely and then mix up your icing and add to the tops of the cookies. You should have enough to do a double icing layer. Top with festive sprinkles and enjoy!
