Classic guacamole with a superfood twist

Want to know one of the first dishes that I made after transforming my diet? Guacamole. I became obsessed with perfecting guacamole!
I love mine loaded with lime, the perfect ratio of garlic and salt and lots of cilantro. Sometimes I don’t even put onion in it! To me, it’s all about balancing those few flavors.

Well, little E loves guacamole (she calls it “mockamoey”) so even though it’s already wonderfully healthy, I wanted to add a superfood twist to enhance the nutrition!
For this recipe, I added spinach, goji berries and pumpkin seeds to my classic guacamole.
The spinach is pretty much undetectable while adding a nice dose of iron and calcium!
The goji berries add a subtle sweetness which pairs so perfectly with all of the other flavors and gives this dish an antioxidant boost.
The pumpkin seeds add a nice crunch texture while adding iron, protein and zinc!

How to Make Superfood Guacamole
First, you want to make sure you have some perfectly ripe avocados ready to go! You want them to be soft when your press in with your finger, but not overly soft.

Start by washing and chopping your cilantro, spinach and red onion.
Wash and cut open three small-medium size hass avocados and add to a medium size bowl.
Add the rest of the ingredients, stir and adjust seasonings to your liking!
It’s so easy and so healthy. Serve alongside chips, sliced veggies or add to toast!

Superfood Guacamole
Vegan • Gluten-Free Serves: 2
Ingredients:3 small-medium size ripe hass avocados 1/4 cup chopped red onion 3/4 tsp minced garlic About 1/8 to 1/4 cup chopped cilantro (add slowly and adjust to your taste preferences!) 1/4 cup chopped spinach 2 tbsp goji berries 2 tbsp pumpkin seeds juice of 1 lime 1/8 tsp salt plus an additional pinch or two (I use pink himilayan salt)
Instructions:
- Wash and chop your cilantro, spinach and onion Set aside.
- Wash and cut open your hass avocados and add the avocado meat to a medium bowl.
- Add all remaining ingredients, starting on the low end with your salt, cilantro and spinach as you’ll want to adjust these to your taste preferences.
- Mash, mix and enjoy!

- Guacamole preferences vary from person to person so adjust seasonings to your liking!
