Incredibly easy weeknight meal! Vegan lentil sloppy joes that are tangy, sweet and savory! Gluten-free, oil-free and absolutely delicious!
Do you have any requirements when it comes to cooking dinner? I certainly do! Even though I am a food blogger and I am cooking and baking all of the time, I NEED fast and simple meals. In fact, that is what I built my blog after; easy, quick and delicious.
Also, I am a stay-at-home mom to a very busy toddler. This means I don’t have time for elaborate and timely meals which I am sure many of my readers agree with. So, with that being said, my dinner requirements fall into four categories:
1. Delicious
2. Simple
3. Fast
4. Healthy
These vegan lentil sloppy joes certainly fit all of those requirements. They are mouthwatering delicious! Hearty lentils paired with flavors like chili powder, cumin, smoked paprika and coconut aminos with ketchup, mustard and maple syrup. Tangy, sweet, savory and hearty.
They are made in about 30 minutes. All you do is cook your lentils, saute your onions, peppers and garlic and then mix all of the ingredients together!
They are very simple and require ingredients you most likely already have in your fridge and pantry.
And my favorite part, these vegan lentil sloppy joes are very healthy, made with organic lentils (protein, fiber, iron and more!). I choose (and recommend!) to season with organic and natural ingredients like organic ketchup and mustard and organic pure maple syrup to keep the added sugars and preservatives out of this dish.

How to Make
Start by measuring out your dry, uncooked green lentils. Add lentils and veggie broth to a medium pot. Then, cover and turn heat to high.
As soon as the lentils are boiling, stir and reduce heat to low. Tilt the lid and simmer for about 10-15 minutes (or until the lentils are done). You will want to keep a close eye on your lentils to make sure they don’t overcook and get mushy or dry out. I remove mine from the stove when they are cooked soft but still have a tiny bit of tenderness to them and are moist with a little broth left in the pot.
While your lentils are cooking, add a splash or two of veggie broth (or a little oil) to a large saute pan and turn heat to medium. Add chopped garlic and stir and cook for a minute or two. Next, add your onions and peppers and stir and cook for about 2-3 minutes.
Once the lentils are cooked and your garlic, onions and peppers are done, add the lentils to the saute pan and mix well. Make sure you turn your heat to low so you don’t cook out the moisture.
Next, add in all of the remaining ingredients and stir well. Taste test and adjust ingredients to personal preference! We love to eat ours on whole wheat buns and sliced onions and avocado. Enjoy!

Vegan Lentil Sloppy Joes [GF]
Ingredients
- 1 cup dry, uncooked green lentils
- 3 cups veggie broth
- 1 cup chopped bell pepper
- 1 cup chopped sweet onion
- 1 & 1/2 tsp chopped fresh garlic about 3 cloves
- splash of veggie broth for sauteing
- 5 tbsp ketchup
- 4 tbsp yellow mustard
- 3 tbsp tomato paste
- 2 tbsp coconut aminos
- 1 tbsp maple syrup
- 1/2 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- salt and pepper to taste
Instructions
- Add dry, uncooked lentils and veggie broth to a medium pot. Stir, cover and turn heat to high. Start chopping your onion and pepper.
- Once the lentils are boiling, turn the heat to low. Stir the lentils and then tilt the lid and simmer for about 10-15 minutes or until the lentils are cooked-you want these soft but a little tender with some moisture left in the pot from the veggie broth . You do not want these overcooked and dry. Watch closely.
- When the lentils are cooking, add a couple splashes of veggie broth (or a little oil) to a large saute pan and turn heat to medium. Add chopped garlic and cook for a minute or two, stirring often. Next, add your onions and peppers and cook for 2-3 minutes, stirring often.
- When your lentils are done, add them to the saute pan with the garlic, onions and peppers. Stir well.
- Turn heat to low (so the moisture doesn't cook out) and add all of the remaining ingredients. Stir well to incorporate.
- The longer the mixture is cooked, the more the moisture will cook out so make sure to remove the mixture from the heat when you are happy with the consistency.
- Serve on whole wheat buns and top with sliced onion and avocado (our favorite way!). Enjoy!
Notes
- You will need green lentils for this dish. Do not use red as they will get way too mushy.

This is the BEST RECIPE EVER!! I have been making lentils for a while because they’re so packed with nutrients and are super filling, but I needed a different recipe. This one is so easy and SO delicious! We even eat it like a chili the next day topped with avocado.
