Date Caramel Ingredients
- 1 cup pitted Medjool dates These need to be moist and sticky! See notes
- 3 tbsp canned unsweetened full fat coconut cream
- 1 tbsp natural runny peanut butter
- 3 tbsp water
- A couple pinches salt
Crispy Peanut Butter Chocolate Ingredients
- 1 (10 oz) bag vegan dark chocolate chips
- 1/4 cup runny natural peanut butter
- 1 & 1/2 cups rice cereal
Make your date caramel: Start by adding all of your caramel ingredients into the food processor. Your dates need to be plump and sticky. If they feel dry, add them to a bowl with hot water and let them soak for about 10 minutes. Drain the water and then proceed with the recipe.Blend all the ingredients until a sticky caramel forms and then set aside. Make your crispy peanut butter chocolate: Add your chocolate chips to a microwave safe bowl and heat in 30 second increments, stirring in between, until melted. You may have to add a little coconut oil to your chocolate chips to get them smooth. Once melted and smooth, add your peanut butter and crispy rice cereal and set aside.
Add a layer of crispy peanut butter chocolate to the bottom of your candy bar molds. I use silicone molds. (8 bars).
Add your date caramel on top of the bottom layer, and then top the date caramel with more crispy peanut butter chocolate.If you are having a hard time adding your caramel to the melted chocolate, you can freeze the bottom layer of the chocolate first, and then add the caramel on top after it has solidified a little bit. Set the bars in the freezer for about 15 minutes or so until solidified. Top with sea salt, and enjoy! These bars can be stored covered in the fridge.
