No Bake Healthier Cheesecake Parfait [GF]

These healthier no bake cheesecake parfaits requires only a handful of ingredients, are sweetened with maple syrup and are the best “cheesecake” I’ve ever had!

Equipment

  • stand mixer or electric mixer

Ingredients
  

No Bake Cheesecake Layer

  • 8 ounces cream cheese (room temp) make sure it’s room temp so it mixes easily!
  • 1/3 cup + 1 tbsp non fat Greek yogurt
  • 3 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Whipped Cream Layer

  • 1 cup heavy whipping cream
  • 2 tbsp pure maple syrup or more to taste
  • 1/2 tsp vanilla extract

Additional Ingredients

  • as many fresh strawberries and crushed graham crackers as you like! measure with your heart

Instructions
 

  • First, you’ll add all of your cheesecake layer ingredients into your stand mixer bowl.
    Note: it’s very important the cream cheese is at room temperature or it can become clumpy.
  • Start mixing on low-medium speed until everything is smooth and creamy. Remove the cheesecake from the mixer and add it to a separate bowl and set aside.
  • Next, rinse your stand mixer bowl (or the bowl you are using with an electric mixer) and then add your whipped cream ingredients.
    Start the mixer on medium speed and mix until you get fluffy whipped cream. This can take about five minutes or more, just watch it very closely so you don’t make butter!
    Feel free to add a little more pure maple syrup if it’s not sweet enough for you
  • Next, you’ll assemble the parfaits into two small glasses or jars. You can add the layers however you want to!
    Note that you may have extra whipped cream which I like to store in the fridge and enjoy with berries the next day.
  • Let the parfaits sit in the fridge for about an hour Please read notes below and enjoy!

Notes

-it’s really important for the cream cheese to be room temperature before mixing or your mixture can get lumpy. If it turns lumpy, you can put everything in the blender or the food processor to smooth it out.
-if you want a thicker and more pronounced cream cheese layer, I would recommend doubling the cream cheese layer ingredients. 
-Make sure to keep a close eye on your whipped cream while it’s mixing so that you don’t accidentally make butter
