No-Bake Lemon Cookie Dough Balls [GF]

These vegan no bake lemon cookie dough balls are gluten free, oil-free and made with no added sugars! Only 5 ingredients!

Ingredients
  

  • 1/2 cup packed pitted deglet noor dates see notes
  • 2 cups blanched almond flour
  • 2 tbsp fresh lemon juice
  • 1 & 1/2 tsp vanilla extract
  • a couple pinches of salt or to taste
  • about 1/2 tbsp lemon zest plus more for topping

Instructions
 

  • Add all of your ingredients, except for the lemon zest, to the food processor.
  • Pulse on high for a minute or two, making sure to scrape the dough off the sides of the food processor down and pulse again.
  • Once the dates are in tiny pieces and the ingredients are well combined, remove blade and add lemon zest. Stir to incorporate.
  • Next, make your balls. Use about 2 tbsp per ball. Squeeze mixture in your hands so it sticks and then roll into balls. You should have about 13 balls.
  • Top with extra zest, if desired. Cover, refrigerate and enjoy!

Notes

Dates: you could try to use medjool dates, but they are much stickier than deglet noor dates which means the end result will be much stickier and less doughy. You will most likely need to add extra flour.
