Vegan Cashew Alfredo Sauce [GF, Oil-Free]

Rich and creamy vegan cashew Alfredo sauce ready in under 30 minutes! Very easy to make, delicious and oil-free!

Ingredients
  

  • 1 cup raw cashews
  • 1 cup chopped sweet onion
  • 2 tsp fresh chopped garlic about 4-5 cloves
  • a few spashes of veggie broth or a little oil if not oil-free
  • 1 cup water start with 3/4 cup then add more water until desired consistency is reached
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 3/4 tsp mineral salt or to taste
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh chopped parsley, plus more to taste
  • pepper to taste

Instructions
 

  • Add raw cashews and water to a medium pot. Cover and bring to a boil. Once boiling, reduce heat to medium and boil for about 15 minutes.
  • While the cashews are boiling, chop and saute onions and garlic for about 5-7 minutes in a little veggie broth or oil. Set aside to cool.
  • When the cashews are done, strain and set aside to cool.
  • Once the cashews, onions and garlic are cooled, add them and all of the remaining ingredients to a high speed blender and blend until smooth and creamy. Start on the lower end with water (3/4 cup) and then add more water until you like the consistency.
  • Add more parsley, nutritional yeast, pepper and garlic to taste. Enjoy!

Notes

  • If preferred, you can also use plant-based milk instead of water, just make sure its a mild tasting unsweetened milk
