Vegan Cashew Alfredo Sauce [GF, Oil-Free]
Rich and creamy vegan cashew Alfredo sauce ready in under 30 minutes! Very easy to make, delicious and oil-free!

- 1 cup raw cashews
- 1 cup chopped sweet onion
- 2 tsp fresh chopped garlic about 4-5 cloves
- a few spashes of veggie broth or a little oil if not oil-free
- 1 cup water start with 3/4 cup then add more water until desired consistency is reached
- 2 tbsp nutritional yeast
- 1/2 tsp garlic powder
- 3/4 tsp mineral salt or to taste
- 1 tbsp apple cider vinegar
- 1 tbsp fresh chopped parsley, plus more to taste
- pepper to taste
Add raw cashews and water to a medium pot. Cover and bring to a boil. Once boiling, reduce heat to medium and boil for about 15 minutes.
While the cashews are boiling, chop and saute onions and garlic for about 5-7 minutes in a little veggie broth or oil. Set aside to cool.
When the cashews are done, strain and set aside to cool.
Once the cashews, onions and garlic are cooled, add them and all of the remaining ingredients to a high speed blender and blend until smooth and creamy. Start on the lower end with water (3/4 cup) and then add more water until you like the consistency.
Add more parsley, nutritional yeast, pepper and garlic to taste. Enjoy!
- If preferred, you can also use plant-based milk instead of water, just make sure its a mild tasting unsweetened milk
