Vegan No Bake Cinnamon Donut Holes [GF, Oil-Free]

Equipment

  • You Will Need: a food processor and parchment paper

Ingredients
  

  • 1 cup pitted deglet noor dates, tightly packed
  • 3/4 cup raw walnuts
  • 1 & 1/2 cups blanched almond flour
  • 2 tsp vanilla extract
  • 1/4 tsp mineral salt
  • 1/4 tsp cinnamon
  • 1/8 - 1/4 tsp nutmeg start on the lower end and adjust to taste

Instructions
 

  • Add dates, walnuts and vanilla extract to a food processor. Pulse for about 2 minutes, until the dates and walnuts are pulsed into very small pieces.
  • Next, add almond flour, mineral salt, cinnamon and nutmeg (start with 1/8 tsp nutmeg then add more to taste) to the food processor and pulse for about 2 minutes. The mixture should look soft and crumbly.
  • Line a plate with parchment paper and start rolling your donut holes. Use 2 tbsp per donut. The mixture will be crumbly so just gently squeeze it together with your hands and then roll into balls.
  • Place donut holes on the plate and then lightly sprinkle cinnamon on top.
  • Freeze donut holes for about 15 minutes and then enjoy!
  • Store leftovers in the refrigerator. They taste even better the next day!

  • Store leftover in the refrigerator, covered.
