Vegan Peanut Butter Cup Nice Cream
This 4 ingredient vegan peanut butter cup nice cream is dairy free, gluten-free with no added sweeteners and so easy to make!
Prep Time 4 hours hrs
Total Time 4 hours hrs
- 3 medium bananas, sliced and frozen overnight OR for a minimum of 4 hours
- 1/4 cup + 2 tbsp natural peanut butter mine is salted- if yours isn't, add salt to taste
- 1/2 tsp vanilla extract optional
- heaping 1/2 cup chopped vegan peanut butter cups
Slice 3 medium bananas and freeze them overnight. Overnight is preferred for the best thick and creamy texture, but if needed, you can freeze them for a minimum of four hours!
Add the frozen sliced bananas, natural peanut butter and vanilla extract to a food processor and process until smooth. Depending on your equipment, you may have to stop several times and use a spatula to move the nice cream closer to the blades so it blends better. I have to do this several times in my Cuisinart.
Once your nice cream is smooth and creamy, remove the blade and cut up your vegan peanut butter cups into bite-size pieces (large or small, your choice) and add them to the food processor and stir.
You can enjoy the vegan peanut butter cup nice cream as a soft serve straight from the food processor, or you can add the nice cream to a loaf pan lined with parchment paper and freeze, covered, for about an hour or two for a more traditional texture. I love topping this with peanut butter and extra peanut butter cups. Enjoy!
