Vegan Pumpkin Peanut Butter Oat Bars [GF, Oil-Free]

Soft, chewy and packed with flavor vegan pumpkin peanut butter oat bars! Minimal clean ingredients, gluten-free and oil-free and ready in about 30 minutes!

Ingredients
  

Wet Ingredients

  • 1/2 cup canned pumpkin puree not canned pumpkin pie filling!
  • 1/4 cup runny peanut butter or sub any nut butter
  • 2 tsp vanilla extract
  • 3/4 cup unsweetened plant-based milk I use oat milk
  • 1/3 cup pure maple syrup

Dry Ingredients

  • 1 cup oat flour just blend up rolled oats in the blender until a soft flour forms- certified GF if needed
  • 1 cup rolled oats certified GF if needed
  • 2 tsp pumpkin pie spice plus additional for topping, see notes
  • 1/4 tsp mineral salt plus an extra couple pinches see notes regarding salt
  • 1/2 tsp baking powder
  • 1/3 cup mini dairy-free chocolate chips plus additional for topping

Instructions
 

  • Preheat the oven to 375 degrees and line an 8x8 baking dish with parchment paper.
  • In a large bowl, add all wet ingredients and whisk very well. Make sure your peanut butter is smooth and runny, not hard and dry.
  • Next, add in all of the dry ingredients and stir very well. The batter should be thick but easily pourable.
  • Add the batter to the baking dish, top with extra chocolate chips, add a sprinkle of cinnamon or more pie spice, and bake for about 20-22 minutes. I take mine out of the oven when a knife inserted comes out with a little bit of residue on it- you don't want to over-bake these as they will cook up more when they come out of the oven and they are better a little under-baked!
  • Top with peanut butter and pumpkin pie spice. Cut into bars and enjoy!

Notes

  • Be sure not to over-bake. I take mine out of the oven when a knife inserted comes out with a little bit of residue on it.
  • I made these so that the pumpkin pie spice is more on the mild side for those who don't want an overpowering flavor, so just add more pumpkin pie spice on top when they come out of the oven if you want more pie spice flavor! 
  • My peanut butter has added salt so double check if yours is salted. If it's not, add more salt to taste.
