These Healthy Vegan Peanut Butter Cup Rice Krispie Treats are sweetened with Medjool dates, contain 6 simple ingredients and no added sugar. Gluten-Free and oil-free.

If you love peanut butter cups and Rice Krispie treats but want a healthier & tastier option, this recipe is for you! These Healthy Vegan Rice Krispie Treats are date sweetened and contain only 6 easy ingredients.

They are easily made in a food processor and the creamy dark chocolate peanut butter layer on top is so dreamy and the perfect addition to the crispy peanut butter base.

The top layer consists of melted dark chocolate chips and natural peanut butter and tastes JUST like a peanut butter cup.

Let’s get to it!

Ingredients

Medjool Dates- make sure they are plump and sticky because it’s imperative for the bars to stick together. If your dates feel dry and look wrinkled, soak them in hot water for ten minutes. Then drain the water and proceed with the recipe.

Natural Peanut Butter- the peanut butter needs to be drippy!

Rice Cereal- you can use any rice cereal but this one is my favorite

Dark Chocolate Chips- for the creamy peanut butter chocolate layer

Vanilla Extract & Salt- for the crispy peanut butter layer

How to Make Healthy Vegan Peanut Butter Cup Rice Krispie Treats

First, add all of your peanut butter rice krispie treats ingredients to a food processor MINUS the rice cereal (Medjool dates, drippy natural peanut butter, vanilla extract and salt). Process for a couple minutes until the dates are in very tiny pieces and the mixture is soft and moist and easily sticks together. If it feels a little dry, feel free to add 1 or 2 tbsp of water and process again.

Next, add your peanut butter date mixture to a microwave safe bowl and microwave for about 25 seconds. Alternatively, you can put the mixture in a small pot and heat up on the stove top. You just want the mixture warm, not hot, for mixing with the rice cereal.

Once the peanut butter date mixture is warm, add in your rice cereal and mix very very well. If the mixture still doesn’t look like it’s sticking together, you can add a tablespoon of water and keep mixing.

Line an 8 x 8 baking dish with parchment paper and add the peanut butter rice krispie treat mixture and press down very very well so that it all sticks together.

Next, add your dark chocolate chips to a microwave safe bowl or to a small pot on the stove. Melt the chocolate chips and then stir in your drippy natural peanut butter. Mix well and then add the dark chocolate peanut butter layer on top of the peanut butter rice crispy treats.

Freeze until the chocolate has set, about 10 or so minutes. Slice and enjoy! You can top with sea salt if desired. Store these Healthy Vegan Peanut Butter Cup Rice Krispie Treats covered in the fridge.

Ingredients
  

Peanut Butter Rice Krispie Treat Layer

  • 1 cup medjool dates about 14 dates. These NEED to be plump and sticky. See notes
  • 1/2 cup + 2 tbsp runny natural peanut butter ingredients should be only peanuts and salt
  • 1/2 tsp vanilla extract
  • 1/4 tsp pink salt my peanut butter is salted. If yours isn’t, you may want to add a couple pinches more of salt. Adjust to taste.
  • Optional 1 or 2 tbsp water only add water if your date and peanut butter mixture is not sticking together! See notes
  • 2 cups rice cereal

Peanut Butter Chocolate Layer

  • Heaping 1/2 cup dark chocolate chips
  • 2 & 1/2 tbsp runny natural peanut butter

Instructions

Notes

-The module dates need to be plump and moist for this recipe to work. If yours feel dry, soak them in a bowl of hot water for about 10 minutes. Drain the water and then proceed with the recipe. 
-My peanut butter is salt salted. If yours isn’t, you may want to add a little more salt to taste in the rice crispy treat mixture or you can top with sea salt.
-Don’t add water to your peanut butter date mixture unless you’re noticing that it’s not feeling moist or sticking together. Only start with a tiny bit of water.
