Vegan Cashew Alfredo Sauce [GF, Oil-Free]

Rich and creamy vegan cashew Alfredo sauce ready in under 30 minutes! Very easy to make, delicious and oil-free!

What is your favorite kind of pasta? If you asked me, I would say any kind of pasta 😉 but I am partial to creamy white sauces.

Although, as we all know, dairy sauces can make us feel kind of icky and bloated since they are filled with heavy ingredients. That is why I LOVE cashew based sauces! You will see a lot of them on my blog.

Cashews are one of my favorite nuts. If you have never made a sauce with them before, you will be so pleasantly surprised. When the cashews are boiled and blended, they turn into a rich and luxurious cream. And the flavor is so versatile, you can get creative and really make any sauce you desire.

I love this vegan cashew Alfredo sauce because not only is it super easy to make, the taste is unbelievable. To amp up the flavors, I saute onions and garlic first before blending all of the ingredients. This simple extra step takes this Alfredo sauce to the next level! Paired with salt, pepper, nutritional yeast, garlic powder and fresh parsley, so good.

How to Make

Add raw cashews and water to a medium pot. Cover and bring to a boil. Once boiling, reduce heat to medium and boil for about 15 minutes.

While the cashews are boiling, saute chopped onions and garlic for about 5-7 minutes in a little veggie broth or oil. Set aside to cool.

When the cashews are done, strain and set aside to cool.

Once the cashews, onions and garlic are cooled, add them and all of the remaining ingredients to a high speed blender and blend until smooth and creamy. Start on the lower end with water (3/4 cup) and then add more water until you like the consistency.

Add more parsley, nutritional yeast, pepper and garlic to taste.

Enjoy! One of my favorite ways to enjoy this sauce is on pizza to make a delicious vegan white pizza!

Equipment

  • High Speed Blender

Ingredients
  

  • 1 cup raw cashews
  • 1 cup chopped sweet onion
  • 2 tsp fresh chopped garlic about 4-5 cloves
  • a few spashes of veggie broth or a little oil if not oil-free
  • 1 cup water start with 3/4 cup then add more water until desired consistency is reached
  • 2 tbsp nutritional yeast
  • 1/2 tsp garlic powder
  • 3/4 tsp mineral salt or to taste
  • 1 tbsp apple cider vinegar
  • 1 tbsp fresh chopped parsley, plus more to taste
  • pepper to taste

Instructions

Notes

  • If preferred, you can also use plant-based milk instead of water, just make sure its a mild tasting unsweetened milk
