These vegan no bake lemon cookie dough balls are gluten free, oil-free and made with no added sugars! Only 5 ingredients!
So, it’s no surprise to anyone who follows my blog that I am a huge chocolate lover. My desserts typically consist of some form of chocolate and my family and I are always ok with that. For example, some of my all time favorite desserts are these gluten-free and oil-free fudgy double chocolate brownies and this gluten-free and oil-free double chocolate banana bread. Although, when the mood strikes for something sweet but refreshing, these vegan no bake lemon balls totally hit the spot!
If you love lemon cookies, then you will love these lemon cookie dough balls! They are refreshing and energizing all while being sweet and comforting. The perfect easy snack or dessert for when you want something sweet but light!
What’s in Them
My favorite part is that these no bake vegan lemon cookie dough balls contain only 5 healthy and simple ingredients with no added sugars.
They are, of course, vegan (as is everything you will find here on Wholesome Crumbs), gluten-free and oil-free! I try to make my recipes with the least amount of ingredients possible all while using quality and nutritionally packed foods to make each treat delicious but also healthy.
The dates make them sweet and the lemon juice and lemon zest add all that refreshing lemon flavor. The almond flour helps with the texture and the vanilla makes them warm and somewhat buttery while enhancing the flavors. Finished off with a couple pinches of salt and it’s lemon cookie dough perfection.
How to Make
Grab your ingredients, a food processor and get started!
Add all of the ingredients, minus your lemon zest, to your food processor.
I use pitted deglet noor dates and 1/2 cup packed (packed means pressing the dates into the cup) yields about 13-14 dates for me but that will vary on the size and type of your dates! Note: you could try to use medjool dates, but they are much stickier than deglet noor dates which means the end result will be much stickier and less doughy. You will most likely need to add extra flour.
Once your ingredients are in the food processor, start pulsing. I pulse mine on high for about a minute or two, stopping at some point to scrape the dough off and down the sides of the food processor.
Once the ingredients are well incorporated (you want your dates to be in tiny pieces and well pulsed) and everything looks like the photo below, taste test. If you desire more sweetness, add a couple more dates. I don’t recommend adjusting the lemon juice or almond flour as this will throw the texture off.
Next, remove the blade and add the lemon zest. I like to add the zest after everything is pulsed because I prefer my zest whole and I like to add it to taste. Adjust zest to your liking. I usually use about 1/2 tbsp of zest plus more for topping.
Next, roll your balls. I use about 2 tbsp per ball which will yield about 13 balls. Squeeze the mixture in your hands to ensure it sticks and then roll into balls. Place in container of choice, cover and refrigerate!
I like to eat these after they have been in the refrigerator a while because the flavors marry but you can eat them immediately!

- 1/2 cup packed pitted deglet noor dates see notes
- 2 cups blanched almond flour
- 2 tbsp fresh lemon juice
- 1 & 1/2 tsp vanilla extract
- a couple pinches of salt or to taste
- about 1/2 tbsp lemon zest plus more for topping
Instructions
- Add all of your ingredients, except for the lemon zest, to the food processor.
- Pulse on high for a minute or two, making sure to scrape the dough off the sides of the food processor down and pulse again.
- Once the dates are in tiny pieces and the ingredients are well combined, remove blade and add lemon zest. Stir to incorporate.
- Next, make your balls. Use about 2 tbsp per ball. Squeeze mixture in your hands so it sticks and then roll into balls. You should have about 13 balls.
- Top with extra zest, if desired. Cover, refrigerate and enjoy!
