You know, in case there are actually people out there who don’t like peanut butter and chocolate. And in that case, I feel a little sad but anyway, let’s just get to this delicious recipe!
These vegan peanut butter chocolate date bars are so easy to make, requiring just 7 ingredients and less than 30 minutes start to finish! I wanted to make these more tender than your typical sticky date bar, so I added in some oat flour which gives it that perfect bite: slightly chewy, soft and tender. SO delicious!
My original plan for these bars was to make them vegan no bake blondies BUT the chocolate layer on top was totally throwing me off (not typical for blondies) and they tasted too good to change, so dates bars it is!
These vegan date bars have no added sugar, no added oil, and are packed with protein and healthy fats! They are also whole food plant based (WFPB) and the chocolate coating can easily be omitted for those looking to avoid it, and replaced with cacao nibs for a more natural chocolate addition.
Ingredients
Medjool Dates- make sure your dates are plump, moist and sticky. If not, soak them in hot water for about 15 minutes, drain the water, and then proceed with the recipe.
Raw Walnuts
Natural Peanut Butter- you want your peanut butter to be well mixed and runny- this will help the texture of the bars.
Oat Flour- I make my own oat flour by blending rolled oats in my blender until super soft and fine. Use certified gluten-free oats if needed.
Vanilla Extract
Pink Himalayan Salt
Dark Chocolate Chips- Enjoy Life is always my go-to brand, they melt so perfectly without needed to add oil!
How to Make Vegan Peanut Butter Chocolate Date Bars
First, line a loaf pan with parchment paper and set aside.
Add all of the ingredients, minus the dark chocolate chips, to a food processor and process for about 2 to 2 & 1/2 minutes, until the mixture looks crumbly but feels sticky. It should stick together easily but if not, add a splash of water and process again.
Add the mixture to the prepared loaf pan in a tight even layer. Either press down with your hands or a small spatula. Really take your time pressing down- since these bars are more tender than typical dates bars, you have to press down firmly to ensure they stick together.
Next, melt your dark chocolate chips in a microwave safe bowl for about 1 minute. Stir until smooth and melted. Pour the melted chocolate over the mixture and spread in an even layer with a spatula. Freeze for about 10-12 minutes, or until the chocolate has set.
Remove from the freezer and add peanut butter drizzle and sea salt. Slice into 8 bars and enjoy! Store these vegan peanut butter chocolate dates bars covered in the fridge.

I made These for a gathering I had At my place and everyone was obsessed. They were so so so good and yet so easy to make! Their def my fav treat to make for a quick sweet tooth hit.
This was the first recipe I tested from this site and they turned out perfectly. The only thing I changed was that I cut them into larger pieces 😉
