Fluffy, soft & incredibly delicious vegan peanut butter mug cake that is also gluten-free and oil-free! A decadent dessert, ready in less than 5 minutes

As you can tell by my Instagram stories, I’ve really been into mug cakes lately! Not only are they so simple to make, but they are the perfect portion; just a few bites and I’m completely satisfied AND I have very little mess to clean up! Win!

Also, as with all of my recipes, I try to make them as healthy as possible while using nutrient dense ingredients. This not only makes it a healthier choice but it tends to fill me up faster.

This mug cake is vegan, gluten-free, oil-free and sweetened with pure maple syrup. Instead of refined flour, this recipe calls for oat flour (which is simply pulsing rolled oats in the blender until a soft fine flour forms) and natural peanut butter in place of refined oil or butter.

Sometimes mug cakes can get a bad rep, but this mug cake is so soft and fluffy! It’s the perfect moist cake texture and it tastes downright delicious. This is a treat for the real peanut butter lovers as there is no shortage of peanut butter taste (you can also absolutely sub in your favorite nut or seed butter)! The addition of chocolate chips makes this little dessert so decadent and the touch of cinnamon finishes it off perfectly.

Tips for the Perfect Mug Cake

The key to getting the perfect mug cake is:

1. Using the correct size mug

2. NOT overcooking it!

I use a mug that is 12 ounces and that is what I recommend (for my recipe). This mug cake rises, but not a lot, so if you use the right size mug you shouldn’t have any overflow issues.

Cook time is huge for mug cakes and can make or break it! When in doubt, under-bake! An under-baked cake is way better than a dry cake. 1:15 cook time works perfect for me every time with a 1000W microwave but you can start with a 1:00 cook time and then cook in 5 second increments until the middle is done (fluffy but moist).

Ingredients
  

Wet Ingredients

  • 2 tbsp natural peanut butter needs to be drippy, not dry
  • 3 tbsp unsweetened plant-based milk
  • 2 tbsp pure maple syrup
  • 1/2 tsp vanilla extract

Dry Ingredients

  • 5 tbsp oat flour pulse GF rolled oats in a blender until a soft flour forms
  • 1/4 tsp baking powder
  • 1/8 tsp mineral salt plus extra sprinkle for topping, see notes
  • pinch of cinnamon
  • 1 tbsp mini dairy-free chocolate chips plus more for topping

Instructions
 

  • Start by adding your wet ingredients into your 12 oz mug (plant-based milk, maple syrup, vanilla extract and peanut butter). Make sure your peanut butter is creamy and drippy, not hard and dry. Whisk very well.
  • Next, add in your dry ingredients (oat flour, baking powder, salt and cinnamon). Whisk very well.
  • Now add in your chocolate chips, stir, and then top with more chocolate chips.
  • Microwave for 1 min and 15 seconds. Important: ALL microwaves vary! Mine is 1000W. You will want to watch this very closely and only cook until the center is done but moist (it will cook up a little bit more as it cools).
  • Cool for a minute or so, top with additional peanut butter and a sprinkle of salt and enjoy!

Notes

  • My peanut butter is salted. Double check to see if yours is salted and then adjust salt to taste preferences.

    I just made this, but instead of chocolate chips (didn’t have any), I used strawberry jam (home made, vegan). This was delish, would definitely make again!
