Soft, chewy and packed with flavor vegan pumpkin peanut butter oat bars! Minimal clean ingredients, gluten-free and oil-free and ready in about 30 minutes!
Pumpkin season is upon us and you won’t see me mad about it! I have been waiting since basically July to post fall recipes lol. As you can tell by my blog, cozy and comforting foods are my favorite regardless of the time of year so let’s get to it!
These vegan pumpkin peanut butter oat bars are packed with all the fun fall ingredients and flavors- pumpkin and pumpkin spice with peanut butter and chocolate is an absolute dream. Mouthwatering, chewy, soft, hearty and made with clean and wholesome ingredients like rolled oats, canned organic pumpkin, peanut butter and pure maple syrup.
How to Make
Preheat the oven to 375 degrees and line an 8×8 baking dish with parchment paper.
In a large bowl, add all wet ingredients and whisk very well. Make sure your peanut butter is smooth and runny, not hard and dry.
Next, add in all of the dry ingredients and stir very well. The batter should be thick but easily pourable.
At this point, taste test.
Important Notes: My peanut butter has added salt so double check if yours is salted. If it’s not, add more salt to taste. Also, I made the pumpkin pie spice flavor more mild for those who don’t want an overpowering pie spice, so simply add more to taste OR sprinkle some extra pumpkin pie spice on the top of the bars when they come out of the oven.
Add the batter to the baking dish, top with extra chocolate chips, sprinkle a little cinnamon or pie spice on top, and bake for about 20-22 minutes. I take mine out of the oven when a knife inserted comes out with a little bit of residue on it– you don’t want to over-bake these vegan pumpkin peanut butter oat bars as they will cook up more when they come out of the oven and they are better a little under-baked!
Top with peanut butter and pumpkin pie spice. Cut into bars and enjoy! I hope you enjoy these vegan pumpkin peanut butter oat bars!

Vegan Pumpkin Peanut Butter Oat Bars [GF, Oil-Free]
Equipment
- You will need: parchment paper and an 8×8 baking dish
Ingredients
Wet Ingredients
- 1/2 cup canned pumpkin puree not canned pumpkin pie filling!
- 1/4 cup runny peanut butter or sub any nut butter
- 2 tsp vanilla extract
- 3/4 cup unsweetened plant-based milk I use oat milk
- 1/3 cup pure maple syrup
Dry Ingredients
- 1 cup oat flour just blend up rolled oats in the blender until a soft flour forms- certified GF if needed
- 1 cup rolled oats certified GF if needed
- 2 tsp pumpkin pie spice plus additional for topping, see notes
- 1/4 tsp mineral salt plus an extra couple pinches see notes regarding salt
- 1/2 tsp baking powder
- 1/3 cup mini dairy-free chocolate chips plus additional for topping
Instructions

Notes

- I made these so that the pumpkin pie spice is more on the mild side for those who don’t want an overpowering flavor, so just add more pumpkin pie spice on top when they come out of the oven if you want more pie spice flavor!
- My peanut butter has added salt so double check if yours is salted. If it’s not, add more salt to taste.
