Course Breakfast, Dessert
- 1 cup mashed banana (about 2 or 3 medium bananas) see notes!
- 1 cup Greek yogurt
- 3 tbsp canned coconut cream (unsweetened) Room temp or refrigerated works- cold is better though!
- 1 to 2 tbsp pure maple syrup
- 1/2 tsp vanilla extract
Toppings
- lots of sliced bananas (an extra 1 or 2 medium bananas)
- crushed graham crackers
Start by mashing your bananas. To get one cup of mashed banana, you’ll need about two or three medium size bananas. Measure out one cup mashed and add to a bowl. Then simply add the rest of the ingredients. I like to use a whisk so there are no big clumps. For the pure maple syrup: I usually add about 1 + 1/2 tablespoons. Start with one, taste, go from there!
To assemble the parfaits, grab 2 glass jars (or cups) and crush up your graham crackers. Add the crushed graham crackers to the bottom of the jars. Then add some sliced bananas on top. Top that with a generous portion of the Greek yogurt mixture. Then continue to layer: crushed graham crackers, sliced bananas and the Greek yogurt mixture! You can also top with whipped cream to take it to the next level.
These banana cream pie Greek yogurt parfaits are best enjoyed immediately for the best and freshest flavor, but can be stored in an airtight container and enjoyed the next day. If you are going to put leftovers in the fridge, make sure to store without the crushed graham crackers and banana slices because those will get soggy.
-Bananas: I like to keep mine in the refrigerator overnight so that the bananas are cold. This helps keep the parfaits cold without needing to refrigerate them! But it isn’t necessary.
-The coconut cream does add a very, very slight coconut taste. You can start with 2 tablespoons and see how it taste before you add the third.
-You will need about four or 5 medium bananas for this recipe.
-I use Simple Mills honey cinnamon sweet thins as my graham crackers. These are gluten-free.
