Curried Roasted Potatoes [V, GF]
Delicious curry potatoes roasted in the oven and topped with cilantro and a touch of lime

- 4 medium potatoes about 2 & 1/2- 3 cups of 1” inch cubed potatoes (I used gold)
- 1 tbsp avocado oil
- 1 & 1/2 tsp curry powder this results in a mild/medium curry flavor. Add more if you want a much stronger/spicy curry flavor
- 1/2 tsp chopped garlic about 2 cloves
- 1/8-1/4 tsp mineral salt or to taste
- Handful of fresh cilantro chopped and divided
- A few squeezes of lime
Preheat oven to 425 degrees and line a baking sheet with parchment paper.
Chop potatoes into small bite size pieces, about 1“
In a large bowl, add your potatoes, garlic, curry powder, salt and a little cilantro.
Bake for around 25-30 minutes until done, flipping once at the 15 minute mark. You want these to be easily pierced with a fork with a nice brown outer.
Toss with additional fresh cilantro and a few squeezes of lime. Add extra salt and curry powder if desired. Serve and enjoy!
