Vegan Apple & Almond Butter Overnight Oats
Ultra delicious and healthy breakfast! Vegan apple and almond butter overnight oats are naturally sweetened, gluten-free and filled with warming fall flavors!

Wet Ingredients
- 1 medium ripe banana, mashed well
- 2 tbsp natural almond butter
- 2 tbsp unsweetened coconut yogurt
- 1 tsp vanilla extract
- 1 cup plant-based milk
Dry Ingredients
- 3/4 cup rolled oats certified GF if needed
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- salt to taste
- 1 apple, chopped into bite size pieces
In a medium bowl, mash ripe banana well. Add wet ingredients and mix very well.
Next, add the dry ingredients (minus the apples-you'll add these in the morning) to the bowl and mix well.
Cover and refrigerate overnight.
In the morning, add your chopped apples (add cinnamon to the apples for extra deliciousness) and desired toppings. Enjoy!
