Vegan Apple & Almond Butter Overnight Oats

Ultra delicious and healthy breakfast! Vegan apple and almond butter overnight oats are naturally sweetened, gluten-free and filled with warming fall flavors!

Ingredients
  

Wet Ingredients

  • 1 medium ripe banana, mashed well
  • 2 tbsp natural almond butter
  • 2 tbsp unsweetened coconut yogurt
  • 1 tsp vanilla extract
  • 1 cup plant-based milk

Dry Ingredients

  • 3/4 cup rolled oats certified GF if needed
  • 1 tbsp chia seeds
  • 1/2 tsp cinnamon
  • salt to taste
  • 1 apple, chopped into bite size pieces

Instructions
 

  • In a medium bowl, mash ripe banana well. Add wet ingredients and mix very well.
  • Next, add the dry ingredients (minus the apples-you'll add these in the morning) to the bowl and mix well.
  • Cover and refrigerate overnight.
  • In the morning, add your chopped apples (add cinnamon to the apples for extra deliciousness) and desired toppings. Enjoy!
