Ultra delicious and healthy breakfast! Vegan apple and almond butter overnight oats are naturally sweetened, gluten-free and filled with warming fall flavors!
Oh, overnight oats, how I love you! If you haven’t tried overnight oats yet, you need to! They are so delicious and nutritious. I think I am one of the odd ones who prefers my oats cold, so I especially love these.
I don’t know about you all, but mornings in our house can be chaotic sometimes, especially when we have morning plans and are rushing to get out the door. Overnight oats to the rescue! Seriously, all I have to do is open the fridge, add the oats to our bowls, add toppings and breakfast is served. SO much easier than cooking anything and my favorite part, NO MESS. Woohoo! Mornings just flow so much easier when there’s no mess to clean up.
These vegan apple and almond butter overnight oats take 5 minutes to prepare the night before. All you do is mix the wet ingredients, then add the dry ingredients, mix, cover and refrigerate overnight!
In the morning, simply add your desired toppings and enjoy! I love adding cinnamon to the apples- so good!

Rolled Oats- protein, carbohydrates, fiber- oats are all around such a great breakfast food.
Chia Seeds- I love adding chia seeds to my overnight oats for a protein and omega 3 ALA boost!
Almond Butter- the addition of almond butter not only tastes great but adds healthy fats and protein.
Cinnamon- the cinnamon combined with the almond butter and apples is SO delicious!

Vegan Apple & Almond Butter Overnight Oats
Ingredients
Wet Ingredients
- 1 medium ripe banana, mashed well
- 2 tbsp natural almond butter
- 2 tbsp unsweetened coconut yogurt
- 1 tsp vanilla extract
- 1 cup plant-based milk
Dry Ingredients
- 3/4 cup rolled oats certified GF if needed
- 1 tbsp chia seeds
- 1/2 tsp cinnamon
- salt to taste
- 1 apple, chopped into bite size pieces
Instructions
- In a medium bowl, mash ripe banana well. Add wet ingredients and mix very well.
- Next, add the dry ingredients (minus the apples-you'll add these in the morning) to the bowl and mix well.
- Cover and refrigerate overnight.
- In the morning, add your chopped apples (add cinnamon to the apples for extra deliciousness) and desired toppings. Enjoy!
