Vegan Peanut Butter Cookie Dough Balls

6 ingredient vegan peanut butter cookie dough balls! These are no bake, gluten-free, oil-free, easy to make and sweetened with maple syrup!

Ingredients
  

  • 1 cup natural peanut butter you want this drippy and soft
  • 1/3 cup pure maple syrup
  • 1 & 1/2 tsp vanilla extract
  • 1/4 tsp pink Himalayan salt + an extra big pinch my peanut butter is salted so adjust amount accordingly
  • 1 cup blanched almond flour
  • 1/3 cup mini chocolate chips

Instructions
 

  • Grab a medium bowl and add your peanut butter, maple syrup, salt and vanilla extract. Stir until well combined.
  • Next, add your blanched almond flour and mix well with a spatula until you have a soft dough. Then, stir in your chocolate chips. Taste test and add additional salt if needed.
  • Use a small cookie scoop to scoop out the dough and then roll the dough into balls. Refrigerate the balls for about 15-20 minutes and enjoy!
  • Store covered in the refrigerator. Makes about 20 small balls.

  • I use a small cookie scoop and this makes about 20-22 balls
