Ultra fudgy and mouthwatering vegan peanut butter mug brownie that takes 5 minutes to make! Gluten-free, oil-free and absolutely delicious!

I am not a huge brownie person (you guys know I am team chocolate chip cookie ALL DAY) but sometimes the craving just hits! If you have been following my Instagram stories, then you know this weekend I’ve been craving ultra fudgy brownies. Here is the thing: sometimes I am SUPER lazy so, I created this mug brownie and oh my gosh, this is amazing!
This takes 5 minutes to make and it’s the perfect single serve brownie for those last minute lazy cravings (this can even be enough for 2 if you wanted to share).
If you are a fudgy brownie fan, then you have got to try this! It’s so fudgy and chocolatey! The addition of peanut butter is just perfection and it’s made with better for you ingredients!
There is no added oil, no refined sugar and no refined flour.
Key Ingredients
Almond Flour- this flour keeps the mug brownie nice and moist (sorry) since almond flour has a higher fat content.
Cacao Powder- I like using cacao powder because of the vitamins and minerals but cocoa powder would work, too!
Maple Syrup- this mug brownie is sweetened with organic pure maple syrup.
Peanut Butter- the peanut butter helps gives this brownie its fudgy texture without the addition of oil.
Dark Chocolate Chips: I love adding the dark chocolate chips to this treat! Not only does it make it extra chocolatey but melty chocolate chips in brownies are irresistible.

Vegan Peanut Butter Mug Brownie [GF, Oil-Free]
Ingredients
- 3 tbsp blanched almond flour
- 2 tbsp cacao powder or cocoa
- 1/4 tsp baking powder
- 1/8 tsp mineral salt plus extra for topping
- small pinch of cinnamon
- 2 tbsp pure maple syrup
- 1 tbsp runny peanut butter plus extra for topping
- 2 & 1/2 tbsp plant-based milk
- 1/2 tsp vanilla extract
- 1 tbsp dark chocolate chips plus additional for topping if desired
Instructions
- Add all of the dry ingredients (almond flour, cacao powder, baking powder, salt and cinnamon) to a mug and whisk very well.
- Next, add all of your wet ingredients (maple syrup, peanut butter, milk and vanilla) to the mug and whisk very well.
- Add in your chocolate chips and stir.
- Microwave for about 1 minute and 15 seconds. I take mine out when it still looks a little underbaked as it will cook more as it cools. It is so important to watch this closely and not overbake as all microwaves vary. Mine is 1000W.
- Cool for a few minutes, top with peanut butter, extra chocolate chips, a pinch of salt and devour!

I’m out of cocoa and cacao- can I leave it out?? I think it will still be yummy… just not as chocolateyyy??
